It is delicious, quick and easy to make and deserves every compliment a sauce can get. If you know me a bit you know that I only go on like that about things I REALLY LOVE and I’ll tell you that my life simply would not be the same if it wasn’t for this beautiful sauce.

Even when I fancy a nice cup of hot soup and I happen to have some of my homemade marinara sauce in the fridge, I’ll add a bit of vegetable stock, a healthy sprinkle of Parmesan (another permanent item in my pantry), and the authentic mama’s zuppa pomodoro is ready in five!!

My love for tomatoes made me very picky when it comes to quality and I rarely order fresh tomato salad in a restaurant, because normally they are served under ripened and have pretty much no flavour.

I also almost never eat shop bought tomatoes within the first few days of purchase. I like to leave them in a window (never ever in the fridge) and give them time so they can become what they were made to be at their best: sweet and super juicy, so you can pick it up and eat it like a ripened plum in September or October at my gran’s farm. And this is the perfect time to make loads and loads of my beautiful homemade marinara sauce, put it in jars and preserve it for the quality-tomato-skinny winter times when fresh, shop bought tomatoes just don’t taste like tomatoes.

My tip for making fresh tomatoes taste better in the winter: sprinkle a tiny bit of finely ground himalayan salt over the freshly sliced tomato, cover and allow 5 minutes for the magic to happen.

Fresh tomatoes homemade marinara sauce is simply amazing and I would only trade that freshness for canned tomatoes from San Marzano. This is what I do in the winter. There is one brand of tomato canning company I trust especially ever since I ate my first ever classic, Italian, 30 min Bacon and Garlic Pasta made by an Italian friend and that brand is Cirio. Cirio is not the cheapest one out there, but if you see it on a shelf of your local store grab it and don’t think twice about it.

FYI: Francesco Cirio is a 19th century mastermind and an inventor of food conserving (by sterilization) industry who had set standards cherished by many Italian traditionalists, especially when it comes to canned tomatoes.

AUTHENTIC ITALIAN HOMEMADE MARINARA SAUCE

Ingredients
  • 28oz (800g) canned, whole San Marzano tomatoes or 2lb best quality, juicy and well ripened fresh tomatoes
  • 5 garlic cloves
  • 3 tbsp olive oil
  • ¼ cup fresh basil - finely chopped
  • 1 pinch red pepper flakes
  • ¼ tsp dry oregano
  • 1 tsp salt
  • pepper to taste
Optional
  • ¼ cup dry red wine
Instructions
Made with canned tomatoes:
  1. Pour tomatoes from a can to a large bowl and using your hands crush them the best you can. Peel garlic, chop finely and fry in oil until fragrant and straw colour, but not browned. (Don’t let it burn or you sauce will taste bitter!)
  2. To the pan with garlic add the crushed tomatoes and follow with all other ingredients. Mix well and allow to simmer for about 20 min (30min if you added the red wine).
  3. During simmering the sauce will reduce slightly which should give it a perfect consistency. Adjust the seasoning of your homemade marinara sauce with more salt and pepper to your taste. Let it cool before transferring it into a storage container (a glass jar or plastic container is ok) and store refrigerated.
Made with fresh tomatoes:
  1. Preheat oven to 200C (400F).
  2. Remove core from washed tomatoes and slice them in to 2 inch pieces/wedges.
  3. Peel garlic, crush it with a flat part of a knife blade.
  4. Toss the sliced tomatoes and crushed garlic in oil, pour into an oven proof tray and bake for 30 min.
  5. Place the tomatoes, garlic and all the remaining ingredients in a food processor and liquidise. Pour the sauce into a pan and allow to simmer for about 15 min on a medium heat (25 min if you added the red wine).
  6. During simmering the sauce will reduce slightly which should give it a perfect consistency. Adjust the seasoning of your homemade marinara sauce with more salt and pepper to your taste. Let it cool before transferring it into a storage container (a glass jar or plastic container is ok) and store refrigerated.
Refrigerate for up to 5 days, freeze for up to 10 weeks.
