Garlic Prawn Stuffed Avocado with sweet chilli sauce – isn’t it a lovely idea?! It takes literally 10 minutes from a pan to the plate and it disappears from that plate even faster! I think this is the tastiest prawns focused dish I’ve ever had. I found it in a cook book, which I bought at The Garlic Farm, along with many other fabulous recipes I’ll surely share soon.
Garlic Prawns Stuffed Avocado is so many delicious things at the same time; sweet, salty, creamy and crunchy and above all really tasty! That sweet chilli sauce is an absolute must! It adds a nice gentle kick and a pinch of sweetness, which accentuates the flavour of prawns.
The recipe says you’ll only need 3 garlic cloves per one pound of prawns but if you do like garlic don’t be shy and add a few more. I only bought 7 oz of prawns (less than half of the recipe’s suggested amount) and used 2 big cloves of garlic. It tasted amazing.
Oh, sorry! I keep going on about Garlic Prawns Stuffed Avocado and you might wonder, why am I talking garlic on a Garlic Free Friday. Well, because I just had it for lunch and couldn’t wait to tell you all about it and also… ok, I’ll just say it: I’ve decided to drop the idea of “garlic free” on Garlic Matters. I know, strange and unexpected, but it must be done.
The truth is that sometimes, even with the best of intentions, it is really easy to lose focus. You think you’re doing the right thing that adds to the value, but in fact you drift away from the subject of focus. Garlic Matters means to be a website about garlic, a collection of garlic recipes on how to deal with garlic and garlic health benefits. Basically everything garlic, through and through.
Initially, the idea of Garlic Free Friday posts appeared somehow quite attractive. It was an experiment, which at the end proved that drifting away theory. There are tons of food websites offering a wonderful medley of content and Garlic Matters was born to be about garlic and I need it to be exactly that. I will post a random garlic free recipe now and again, but I don’t want to keep it as a regular event in my editorial calendar. I do hope this is ok with you guys and you won’t mind this change. I want to remain true to my original idea, because I believe in it and I love garlic. Let me know your thoughts.

How to serve the Garlic Prawns Stuffed Avocado with Sweet Chilli Sauce
The recipe suggests to top the halved avocado with the prawns and the sauce. But if you want to dice the avocado and mix it with the prawns and the sauce, or even add a bit of quinoa or pasta to make it to a more substantial dish, go for it.
Served as it is, it will give you an amazing, light appetizer leaving you wanting more and more. I mean it – it is so good! I have actually ended up eating 2 whole avocados and that 7 oz of prawns in one go. No kidding, I could have had even more!
- Knob of butter
- 500g raw fresh prawns, peeled, deveined
- 3-5 garlic cloves - finely chopped
- 3 tablespoon sweet chilli sauce
- 2 ripe avocados, peeled, halved, stones removed
- juice of 1 lemon
- fresh chives and parsley or cilantro leaves, finely chopped, to garnish
- In a pan, on a medium heat, melt the butter, throw in the prawns and garlic and stir until both garlic and prawns and cooked through. Once cooked mix in the sweet chilli sauce and take of the heat.
- Top the halved avocado with the cooked prawns, season with salt and pepper, sprinkle with plenty of lemon juice, chives and parsley or cilantro leaves.
