3 ingredient mayo-free egg spread
It could be, but today it’s all about eggs, because the Spring is here! Did I tell you?!
Happy days of daffodils everywhere and eggs-everything! When it comes to eggs, to me it is the full on celebration of fluffy omelets, soft boiled, hard boiled, poached, fried, sunny side up or down eggs. Sweet childhood memories of Gogl-Mogl, snacking on deviled eggs or simply beautiful egg filler in buttered baguette… ok, breathe in!
What makes it special? No-mayo part – to help you keep the unwanted pounds away! The binding hero in this tasty combination of only 3 ingredients is the light ricotta cheese. And it works really well. Try it for yourself!
Mayo-free egg spread with ricotta and garlic chives, or any chives really, is light, fluffy, bouncy and absolutely mouth watering – Spring perfect sandwich or wrap filler! Simple, tasty and full of spring! Add avocado, sweet corn, tomato, green leaves, watercress or other favourite sprouts and enjoy for breakfast or light lunch!
- 3 hard boiled eggs
- 1-2 tbsp light ricotta cheese
- 2 tbsp chives
- salt & pepper to taste
- Sweet corn
- Pulse all ingredients in a food processor for 30 sec, scrape the No-Mayo Egg Spread from the edges of the bowl and pulse it further for another 30 seconds. Job done!
