This little dish has totally rocked our barbecue afternoons and unquestionably landed number one spot on my favourite barbecue dish list this summer. BBQ Pork with Black Garlic Honey Marinade Sauce couldn’t be easier to put together, tastes divine and ticks all the ‘finger-licking BBQ dish’ boxes.
Recently it felt a lot like the hamster wheel of life started to really kick into gear. To slow down a bit and to celebrate these fabulous, first weeks of British Summer we decided to have an easy BBQ afternoon last weekend. Lovely weather always puts me in the most creative culinary mood and this is also when the simplest and the tastiest recipes come to life.
Perfect BBQ Pork with Black Garlic Honey Marinade Sauce
Anyone who ever barbecued has their golden rules in this department. One thing we all agree on is that the easiest way to bring the best out of a piece of meat before cooking it on a barbecue is to infuse it in a marinade. Marinade plus time equals magic my friends and no one can argue with that! What goes into the marinade is a matter of taste, but in my opinion the usual suspects like olive oil, raw garlic and BBQ seasoning seem a bit predictable and almost old fashioned…
So how to revive the BBQ marinade and make it into a gourmet experience?
Experiment with new ingredients! My eureka moment was when I added some black garlic and instant coffee into the picture. Mixture of black garlic paste, honey, coffee and balsamic vinegar creates an absolutely delightful barbecue marinade equation and I encourage you to give it a go.
You can also coat your veggies in it or even use it lightly over salad as a dressing, but it is meant primarily for meat and I love it particularly with pork (bye, bye apple sauce!)
In case you wonder where to get the black garlic for this marinate from: my favourite supplier of black garlic is Balsajo Black Garlic.
I especially recommend their black garlic paste and peeled black garlic cloves in a tub, which are sweet, soft and juicy and mash really well (unlike some Chinese brands I tried before I discovered Balsajo).

- 4 pork chops, one inch thick
- 8 pork ribs
- Salt & pepper
- Combine all marinade ingredients together with a hand whisk or in a food processor, making sure that the coffee granules have completely dissolved. Coat the pork pieces in the marinate mixture and leave covered to infuse for 3-4 hours or overnight in your refrigerator.
- Preheat a barbecue to 250C (482F). Season your pork pieces liberally with salt and pepper and barbecue with a barbecue lid down for about 25 minutes at a temperature no lower than 200C (392F), turning the meat now and again.
Prep time does not include marinating time (4h or overnight).
