Salmon with black garlic glaze contains a strange little fellow called black garlic.
Black garlic is a bit of a new kid on the block to me at this point, but what I like about it is its complexity of flavour. The tones, notes and hints of all sorts of spices and foods can be very confusing at first.
Ancient mystics claim that black garlic grants immortality! That’s a good enough reason for me to try and come up with some nice recipes!
How about Salmon with Black Garlic Glaze?
It was my partner who inspired salmon with black garlic glaze. By mixing soy sauce and brown sugar he created a simple, delicious, slightly sticky soy sauce for the salmon we had for lunch one afternoon. I modified his basic recipe by adding ginger, black garlic and lemon juice.
Black food does not appeal to me in general ever since I ate some crispy (squid) black ink noodles. These little fellows don’t look very appetising at first sight either, but it has got nothing to do with the black ink.There is the whole world of delicious flavours hiding inside each clove!
Black garlic flavour is probably one of the most difficult ones to describe. It has sweetness and saltiness to it. Notes of caramel and chocolate, hints of aged balsamic and tamarind… complex and puzzling as the taste of umami.
This Health Impact New article claims that this transformation mysteriously doubles the amount of antioxidants and calcium in black garlic, in comparison to its raw version! That’s what I call a super-food!
Black garlic does not give you garlic breath!
- 250 g salmon fillets
- 4 tbsp light soy sauce
- 2 tbsp olive oil
- 3 black garlic cloves
- 2 tbsp lemon zest
- 1 tsp lemon juice
- 1 tsp grated ginger
- 3 tbsp brown sugar
- salt & pepper to taste
- wedges of lemon to serve
- Season salmon with salt & pepper.
- Smash black garlic with a fork or a side of a knife's blade, until it turns into a rough paste. Add all remaining ingredients and reduce this mixture in a pan on a slow heat so it starts to bubble and becomes noticeably thicker (about 5-7 minutes).
- Place your salmon in the pan with the garlic sauce and fry for 10-12 minutes, coating it with the sauce during cooking.
